Oat Tahini Fudge Bars

The exceptional combination of tahini, sesame seeds, oats and chocolate strikes the perfect balance of salty and sweet in these nutrition-packed bars, and provides a delicious source of calcium, iron, protein and fibre.

INGREDIENTS

  • ½ cup Nuts to You Tahini (try it with NTY Sunflower Seed Butter or Peanut Butter)

  • ½ cup semi-sweet chocolate chips or a 100g bar of chocolate (we love using Camino brand!)

  • ¼ tsp sea salt

  • 1 tsp vanilla extract

  • ½ cup unsalted butter or coconut oil, room temperature

  • ½ cup packed brown sugar

  • 1 cup rolled oats

  • 1 cup oat flour (or finely ground oats)

  • ¼ tsp sea salt

  • ½ tsp cinnamon

  • ½ tsp baking soda

  • 2 Tbsp sesame seeds

INSTRUCTIONS

  1. Preheat the oven to 350⁰F. Line a 7”x7” or 8”x8” square baking pan with parchment paper. Set aside.

  2. In a double boiler over medium heat, melt tahini, chocolate chips, sea salt and vanilla until smooth. Set aside.

  3. In a mixing bowl, use a hand blender to cream together the butter and brown sugar until light in colour, about one minute. Add oats, oat flour, salt, cinnamon and baking soda and mix by hand until a dough forms.

  4. Press two-thirds of the oatmeal mixture into the bottom of the baking pan. You may want to lightly wet your fingers to avoid sticking.

  5. Pour the fudge mix over top of the base and tap the pan to level out this second layer.

  6. Crumble the remaining oatmeal mixture over top, then sprinkle with sesame seeds.

  7. Bake for 20 to 25 minutes or until the tops of the bars are very lightly golden brown.

  8. Before slicing, let the bars cool completely or even refrigerate a little; this avoids crumbling. We like to store ours in the fridge for an extra fudgy texture!
