No-Cook Vegan Chocolate Pudding
A delicious and healthy dessert made in a blender in 5 minutes? This recipe will be a go-to for last minute dinner parties or for satisfying your sweet tooth in hot weather!
Yield: 6 small but rich servings
INGREDIENTS
● 1 can (400ml) full fat coconut milk
● ¼ cup cocoa powder
● ⅓ cup Nuts to You butter of choice
● ¼ cup maple syrup (adjust to taste)
● 1 tsp vanilla extract
● Pinch of salt
● Toppings of choice: berries, coconut flakes, coconut whipped cream, cacao nibs
INSTRUCTIONS
1. Place all the ingredients in a blender and combine until completely smooth and creamy, about 1 minute. Scraping down the sides half way through helps the ingredients incorporate.
2. Taste. Add more maple syrup if desired.
3. Pour the pudding into serving cups or jars, and refrigerate for at least 2 to 3 hours.
4. Enjoy straight from the fridge with toppings of choice.
5. Store in the refrigerator, covered with plastic wrap or a beeswax wrap. Enjoy within 4 days.
