Peanut Soup

Peanut (or groundnut) soup, a traditional dish in West African countries such as Ghana and Nigeria, is often served with stewed meat and rice. Use Nuts to You Peanut Butter to get this flavourful, nourishing and lip-smacking stew done for dinner.


Yield: 4 Servings

INGREDIENTS

  • 1 Tbsp olive oil

  • 1 medium onion, diced

  • 1 thumb-sized piece ginger, finely chopped

  • 3 garlic cloves, finely chopped

  • 2 Tbsp tomato paste

  • 2 tsp ground coriander

  • 2 tsp garam masala

  • 1 tsp cayenne pepper

  • 1 tsp salt

  • 2 medium tomatoes, diced

  • 4 cups chicken stock

  • 1 medium sweet potato, peeled and diced

  • ⅔ cup Nuts to You Peanut Butter Smooth

  • 1 cup chopped kale or spinach (optional)

  • Juice of 1 lime

  • Cilantro, chopped peanuts and lime for garnish

INSTRUCTIONS

  1. In a large pot over medium high heat, sauté onions in olive oil until soft, about 4 minutes. Add ginger, garlic, tomato paste, spices and salt and cook for another 2 minutes until fragrant.

  2. Add diced tomato and chicken stock and stir until well combined. Add sweet potatoes, reduce heat and simmer for 15 to 20 minutes, until tender and fully cooked.

  3. Stir in Peanut Butter until well combined. Add greens and lime juice, and season to taste.

  4. Serve with rice. Garnish with cilantro, chopped peanuts and a lime wedge.
