Miso Peanut Butter Cookies with Brown Butter

Are you a fan of salty sweet treats? You’ll love these umami-filled peanut butter cookies with the nuttiness of brown butter and miso paste!


Yield: 12 large cookies

INGREDIENTS

  • 1 cup all-purpose flour

  • 1 tsp baking soda

  • ½ cup unsalted butter

  • ½ cup Nuts to You Peanut Butter (Smooth or Crunchy)

  • 3 Tbsp miso paste

  • ¾ cup packed light brown sugar

  • 1 tsp vanilla extract

  • 1 egg

  • ¼ cup white or demerara sugar, for coating

INSTRUCTIONS

  1. In a medium pot on medium heat, cook the butter until it foams and then browns, about 5 minutes. Make sure to stir often with a wooden spoon and to scrape the bottom of the pot to avoid burning the milk solids. Pour into a large mixing bowl and set aside to cool for 5 minutes.

  2. In another mixing bowl, combine flour and baking soda, and set aside.

  3. Once butter has cooled, whisk in peanut butter, miso, sugar and vanilla. Then add the egg and mix quickly.

  4. Sift in the flour mixture and fold until incorporated. Put the dough in the fridge to chill for 1 hour.

  5. Preheat oven to 325°F and line 2 baking sheets with parchment paper.

  6. Portion the cookie dough out; each cookie should be two rounded tablespoons. Roll in sugar and arrange on baking sheets. Flatten each cookie with a fork in a cross pattern.

  7. Bake for 10 to 12 minutes, until just the very edges are golden brown. Let cool for 5 minutes and enjoy!
