Healthy Blender Banana Bread
While we all love a decadent banana bread recipe filled with buttery sweetness, sometimes life calls for a healthier version! Enjoy this recipe’s simple and nourishing bread as a snack or breakfast on-the-go.
Yield: 1 loaf
INGREDIENTS
● 1 cup quick oats (large flake oats work, just take a little longer)
● 1½ tsp baking powder
● ½ tsp fine salt
● 3 ripe bananas
● 2 eggs
● ½ cup Nuts to You Nut Butter of choice (we like peanut butter!)
● ¼ cup maple syrup
● ½ cup chocolate chips (optional)
INSTRUCTIONS
1. Preheat the oven to 350⁰F and line a standard loaf pan with a sheet of parchment paper.
2. Blend oats, baking powder and salt in a blender until you have the consistency of flour. Remove from the blender and set aside.
3. To the blender, add bananas, eggs, nut butter and maple syrup, and blend until fully smooth and liquefied. Add oat flour mixture and blend until incorporated. If your blender is not high speed or powerful enough, you can mix the wet and dry ingredients together by hand in a mixing bowl.
4. Pour batter into the pan, then stir in chocolate chips if using. Bake for 40 minutes or until a toothpick inserted into the banana bread comes out clean.
5. Allow to cool before slicing. Keep wrapped at room temperature for up to 4 days.
