Creamy Cashew Popsicles

Dairy-free homemade popsicles! How could summer get any better?!


Yield: 6-8 popsicles

INGREDIENTS

  • 400 ml can full-fat coconut milk

  • ¼ cup Nuts to You Cashew Butter

  • ¼ cup maple syrup or honey

  • 1 tsp vanilla extract

  • Pinch salt

Flavour additions

  • For fudgesicle, add 3 Tbsp cocoa

  • For creamsicle, add juice and zest of two oranges

  • For berries and cream, add ½ cup berries

  • For caramel coffee, replace maple syrup/honey with ½ cup pitted Medjool dates and add ½ cup coffee

INSTRUCTIONS

  1. Blend base ingredients and flavour addition in a blender until smooth, about 2 minutes.

  2. Pour mixture into popsicle mold and freeze for 4 to 6 hours.

  3. To serve, release popsicles by running the mold under warm water for a few seconds.
