Cashew Chicken

Looking for an easy homemade dinner that will come together in less than 20 minutes? Skip the delivery and whip up this rich and flavourful sauce inspired by the North American-Chinese takeout classic.


Yield: 2-4 Servings

INGREDIENTS

  • ¼ cup soy sauce or tamari

  • ¼ cup Nuts to You Cashew Butter

  • 2 Tbsp hoisin sauce

  • 1 Tbsp rice vinegar

  • 1 Tbsp maple syrup

  • ½ tsp toasted sesame oil

  • 2 tsp minced ginger

  • 2 cloves garlic, minced

  • 1 Tbsp cooking oil

  • 1 lb chicken breasts or thighs, cut into bite-sized pieces

  • Salt and pepper to taste

  • 1 red bell pepper, diced into small pieces

  • 1 cup broccoli florets, diced into small pieces

  • Handful of roasted cashews

  • 2 green onions, sliced

  • Serve with white rice or noodles

INSTRUCTIONS

  1. Combine soy sauce and Cashew Butter in a bowl and whisk until smooth. Add hoisin, vinegar, maple syrup, sesame oil, ginger and garlic and mix until combined. Set aside.

  2. Add cooking oil to a frying pan on medium high heat. Salt and pepper the chicken, then fry it in the pan until golden brown and cooked all the way through, about 5 minutes. Remove chicken from the pan and set aside.

  3. Add red pepper and broccoli and sauté until soft, about 5 minutes.

  4. Add sauce, chicken and cashews to the pan. Mix so that everything is coated in the sauce and simmer for 1 minute.

  5. Garnish with green onions and serve with rice or noodles. This recipe makes great leftovers!
